Soups

Some friends asked for these recipes of soups i made, so here they are:

Mushroom and chicken soup

First we need to make some base like for a chicken soup. So, put in the fire some chicken scraps with the liver and kidneys, some onion, a carrot salt, pepper and a lot of water. Cook that for a very long time very slowly. Take the chicken out and reserve. Take the vegetables and filter the water, reserve the water. Make into pieces the chicken meat, the liver and the kidneys. The first part is now ready. Lets work on the soup.

Chop some french onions (they are sweeter than the big ones), put them with some butter and let cook until they are transparent. Clean (not wash) the mushrooms, they should be white like Paris mushrooms. Cut them in fours and squeeze some lime on top to stop oxidation. Put the mushrooms with the onions and cover. Let them cook, they will release a lot of water. Add some water from the chicken cooking and cream, cook a little more, reduce to a cream, cook more, rectify with chicken cooking water and check salt. Then add the chicken, liver and kidneys. Serve hot with some Parmesan cheese (optional).

Mushroom and lobster soup

Much like the previous, but instead of chicken we use lobster. Cook the lobster in salt water (if you are brave you can use sea water). Filter the water an reserve. Take the meat from the lobster and also reserve all juices and the shell. Put the juices and the shell with water to cook for a long time and slowly. Don't forget salt and pepper. This completes the first part.

The second is much like the previous recipe. Just don't add the lobster to the soup. Put in every plate some soup, then the lobster in the middle and some "presunto" (if can't use that use "proscuito") sliced very thin around the centre. This soup was served in this new years dinner.

I'm not a professional cook, so my english isn't the best for this, but i guess you take the whole idea and won't be sick by this.
